RecommendedIt is the only bean you can properly use to cook red beans and rice. When I had to move away from New Orleans you could not find them everywhere like you cannot. I had to make routine visits to New Orleans Schwegmanns to stock up on Camellia Beans and other treats like coffee with chicory. I would drive back to Alabama with my car loaded down. I used to love those trips and sharing my red beans and riced with smoked sausage.
