Great food and amazing staff! Stopped in during lunch, it was very clean and everything looked great. Staff were friendly and it was very easy to order what I wanted. Despite being a counter service restaurant they checked in to make sure our experience was good. Will definitely visit again.

Really they need 6 stars for customer service, I've never been in with anyone but incredibly friendly staff who are ready to answer any questions you have. Poke is starting to get trendy and there are several options in Gilbert, I've been to all of them, and the three things that stand out and Koibito poke are the freshness of the ingredients, the friendliness of the staff, and the flexibility they have helping you with you order. I highly recommend this place for your poke fix.
This was the freshest poke we have had in town. Everything was so fresh and the portions were generous. They also have cauliflower rice as an option. Yum. Their bowl menu is great with so many interesting combos and you can also make your own bowls, which is what I always do. They have wraps, etc. We generally just do bowls. The service was excellent.
