We always like to get vegetable Samosa to start. I find it's a great test of a restaurant. Good ones have a flaky light pastry and very savory filling. When it's not made on premises or the quality is lower, the pastry tends to be oily, dense, and dominated by just one or two flavors rather than the lovely balance that can be achieved by a good chef.
