Until recently, I hadn’t been going to Guadalajara in years- however, it was a common spot I used to dine at frequently over a decade ago. Going back brought back memories not only with the food but the environment and the festivity surrounding the restaurant. For starters, the staff are always very welcoming, the host always offering a friendly greeting, and the servers offering good insight on what meals they have to offer. We have been dining here for 15 plus years, food is consistently excellent, staff has always been extremely friendly and attentive. I can’t recommend them enough

Best part was that I was able to hold in the diarrhea all the way home… taco birria… tasted like canned brisket. Not cilantro, it was parsley. Bland even by Colorado Mexican standers. Not as bad as my review of Dos Locos in keystone (no closed as it should be). A birria taco is cooked / seared in au jus (French for j’nest se quoi) so the taco shells are perfectly crisp.
