One thing I love about authentic Japanese culture is this quiet kind of beauty — nothing loud or showy, but the beauty is right there underneath. If you're getting tired of Western-style Japanese food drowned in heavy sauces, I'm pretty confident Tsukiji Kitchen is the best example of that subtle, authentic Japanese cooking in Metro Vancouver. We had a chef's sashimi bowl and a salmon bowl. I specifically asked to have only tuna and salmon on the chef 's sashimi bowl because I don't care for eel or small shrimp and so on. He said they can do that. Then came the ball not only very little seafood on it. A piece of tuna that would be half size on a sashimi, three little shrimp and tiny bit of eel on it and also not a whole lot of rice.
