The breast is wrapped in a duxelles of mushrooms and shallots, the mousse studded with Alsace bacon, firm flesh contrasting with creamy smoothness and all set atop a velvety Albufera sauce made by mixing more of the jus with foie gras, port and Madeira. Unfortunately they are now closed and we won’t get to enjoy their tasting menu any more. This was one of the best restaurants in Mayfair. Hoping to see a new owner soon and looking forward to what they will achieve in this wonderful place.
