What a gem we found in this beautiful historic town while driving through. We needed a bite to eat and The Cutting board did not disappoint. Parking was free and we walked by a stunning river walk to the front door. We had the Green chili nachos and Super black bean bowl. Both were delicious and perfectly seasoned! The owner was very personable and friendly sharing some facts about his hometown! He also offered us his last homemade dessert he had made. We absolutely love stopping here when in Pueblo! The food never disappoints and their new location has a great atmosphere. My husband who is not plant based even enjoys eating here. Their Jackfruit is some of the best Iv tasted, can’t wait to come back for more.

Had no idea this place was in Pueblo happy that I found it. It’s hard to find places to eat for my son with his allergies, love the vegan options! Food was great, service was great and was a cute little place to sit down and eat.
This place is beyond fabulous! Incredible vegan food, atmosphere, and people.
