Just got a GF wrap breakfast roll, tasted great but couldn't workout why the eggs had gluten in them, unless there plastic human made eggs?

I attended subway with a few friends a couple of nights ago. We were after a simple order and after removing the white chopping boards that they usually make the subs on they started. I watched my sub drag across the metal plate the whole time, along with everyone else’s order. I tried not to be picky as I have OCD especially with food. We paid left and ate in the park outside.
