I asked the butcher to cut a 1.5-inch-thick, 2-pound chuck roast into 1-inch pieces for my beef stew. When I got home and opened the package, I was shocked and furious to see that the beef was less than 1 inch thick and the pieces were all different sizes. It wasn’t the 1.5-inch chuck roast I had handed to the butcher — it looked like leftover trimmings instead. My advice: don’t ask the butcher to cut your beef. They may not be honest.
