Spectacular. Absolutely the BEST Japanese meal I’ve had since my last trip to Japan 25 years ago. The food at Sakana was delicate, refined and in every way superior to Japanese fare even in vaulted Vancouver sushi restos. Fish was perfect temperature (not cold as in standard sushi joints), rice was warm and not too vinegary (as in standard sushi joints). I would eat here every week if I lived in Hamilton. I came here late on a Friday night because this was the first place I've seen in North America that sells ochazuke (it's likely not the only place, but it's definitely a rarity in my experience). When I walked in, the scent of dashi and green tea brought me back to Japan, and I knew I was in for a treat. I have an unusual and ubiquitous allergy that's found in unexpected ingredients.
