Road tripping from AZ to SD. Alexa said this place was a MUST STOP side quest. AI was not wrong. We came for the bison bbq and some sides. We ordered way more than we could possibly eat in one sitting. The bison ribs and burnt end and brisket were so tasty. DO NOT SKIP THE COWBOY BEANS!!
The brisket is absolutely divine. The best I've ever had, without a doubt! Delicious!
The poblano Mac n cheese is god sent. Bison ribs are also solid.
I'm giving Roaming Buffalo five stars for its creativity. While some of the meat was a bit on the dry side, you can fix that. Teaching someone to be truly creative is much harder. Most barbecue spots in Colorado just replicate Texas Kansas City, or St. Louis styles. Roaming Buffalo feels like genuine Colorado barbecue with buffalo ribs and lamb on the menu.
