In 1982 Gina and Mike Cox opened the Homemade Ice Cream and Pie Kitchen as a lunch counter at 2525 Bardstown Road, in what was formerly an old Cheverolet dealership, then converted to a small neighborhood center on the outer edge of the historic Highlands district in Louisville. Everyday they would serve lunch and meals from the lunch counter, baking was a small part of the business. They started making one or two pies a day.
