Many establishments think that they serve authentic sushi. Only a few actually understands what real sushi should taste like. This simple dish is one of the hardest to get right, and harder still to master. There was perfect balance and harmony in every piece of nigiri. The sashimi was rich with flavour, but not intrusive.
