I agree there's far too few new builds (and home additions alike) using this form of building. FiberGlass insulation is so antiquated and loses R-value with minimal moisture content, making foam insulation vastly superior. I used SIP's for my 1300 sq.ft./ 2 story addition, and even though my walls and roof panels were only 3.5" foam, it still outperforms 2x6 walls, with less outside noise.
