Got here at 10am and joined a couple people in line. Their St Louis ribs have a sweet honey caramelized teriyaki, jerky-like top layer while preserving the savory fatty pork beneath. This is a uniquely sugary take on ribs in Tucson since most of the ribs here are purely savory/spiced. Reminds me of char siu pork in the best way! The brisket falls apart if you look at it too hard. Packed with beefy flavor and a peppery bark.
