Chef Song made a delectable dish of Escarole flame seared Carpaccio with a reduction of essence I can only imagine was curated by gods. Thin slivers of jalapeño and micro greens added both spice and fragility to this well balanced dish. Next time I will try the Yellow Tuna Tail Truffle. Every dish is its own experience. Enjoy.
