I went to Jeannottes this morning to get some hamburger (best in town)for the weekend. I noticed the burger in the case was 85%-90% lean, I like some fat in my burgers I asked if they had any 70%-30% mix, the woman at the deli said "I don't but if you can wait a few minutes I can grind some fresh for you" In less then 10 minutes I had a pound and 1/2 of fresh ground beef that was the perfect fat to beef ratio (in my opinion) for burgers.
