Every major metropolitan city has numerous food critics who get paid to covertly partake in a particular restaurant to size up the chef's imagination, the atmosphere, the wine list, etc. Food critics can also be the first time customer, a repeat customer, or just someone who is downright hungry and wants to try a new place.
