I'm a fan of many years, until recently. In recent years, it seems to me that the menu becomes ever more pork-heavy. Is there no bistro in France that makes beef or chicken sausage? Bacon now comes in many forms other than pork bacon. I am disappointed that such quality chefs do not attempt to vary the menu more.
