I had the pleasure of sitting at the bar (I don’t drink, but the seat was worth it anyway) facing directly into the kitchen — and it turned into a far better experience than I expected. Watching this team work was mesmerizing. They moved together with real precision, balancing the cold and hot stations so seamlessly that every plate felt choreographed rather than just cooked. It pulled me in — I found myself as invested in the rhythm of the kitchen as I was in the food itself.
