Michael McCann is the perfect mix of aesthetic design genius to make things look gorgeous and experienced hospitality operator to ensure things are practical and work well. Working with him on the redesign of Sydney Seafood School in 2009 was a highlight of my 25 years at Sydney Fish Market. Which is why I insisted on having him on board for the design of the new Seafood School at the new Sydney Fish Market. He never disappoints and does whatever it takes to deliver on time and on budget!
