Chimm is hands down one of the restaurants I miss most from our time in Virginia. My husband and I found it while shopping nearby, and after seeing that they offered gluten-free options, we decided to give it a try. The gluten-free fried rice and pho are absolutely phenomenal. I have been to Chimm probably 20 times since it has been open. The last 4 to 5 times, the service has been steeply declining with particularly rude servers. Last night, we went and had an incredibly rude server. She was grumpy and not friendly the entire time serving us. It was extremely empty in there, and when it was time to check out, she hovered over us watching which percentage tip we would give. This was my 1st eating here, the food was flavor Town. I was craving fried pork belly, the way they fried the pork belly and the chili sauce on the side to dip, words can’t explain how delicious this appetizer was. Really should be a main entrée with rice.

I ate at Chimm for the first time today, and it was great. The wait staff was attentive, and the food was delicious. I had the red curry stir fry. It definitely had some heat, but the flavor was not overwhelmed and was well balanced. Our appetizers were the dumplings and spring rolls, both delicious. I will be coming back.
