As a Philly guy I can say(especially here in IA where NO ONE gets a Philly Cheesesteak right!) Capriotti's is as close as they come. Typically, on the east coast where everyone eats these, they are simply plain(incl cheese), with onions, or without. Adding mushrooms or peppers is ok if you lean toward Chicago Italian beef sandwiches but it's not typical of a Philly steak sandwich. Nor is slathering on mayo or other condiments. But I'm a purist!
