I have been taking ad hoc rec classes here and there in NYC and found this program a few months ago. Flew in for the course and it did not disappoint. Chef Paul is an outstanding instructor who really knows the techniques, science and artistry of chocolate. It was inspiring to learn from someone who can not only design recipes but also demonstrate in a very easy way to understand. Took a master class taught by andrey dubovik. The class was very informative and will benefit my pastry career. The callebaut staff was helpful in answering questions leading up to the class, everything needed for the class was prepped ahead to make the class run smooth.

If you are interested in learning about & making chocolates, you must try a class at the Chocolate Academy! The staff was amazing and the instruction was top notch. The take-home bounty of bonbons was an added bonus.
