My wife and I went to 888 recently for our wedding anniversary. We had a wonderful time with excellent service and scrumptious Italian dishes. Is this restaurant still owned by an Italian (from Italy) who should know better? My eggplant parmigiana was a big disappointment. It completely lacked the flavor that one associates with this dish. The secret is in coating the eggplant slices with flour or breadcrumbs and lightly frying. There is probably something else to it, like a way to treat the eggplant slices.
