I asked the deli lady this morning if they over-cook their chickens. She replied an a stern NO! What I was meaning was simply.. when I hold the chicken leg.. should it pop out of the meat? I get it. Its better to over-cook it that under-cook. But they will continue to cook in those batchelor hand bags under the heat lamps and all the way home. Honestly, those legs were dry and wrinkly.. the chicken, not the lady.
