Some time ago l spent several months at the Paulian Villa in Sydney as an agency Chef. Having arrived there, the then chef Andrew (about to take a leave of absence for a few months) apologised to me for his lack of food innovation in terms of creativity and diversity. l was actually taken aback for a number of reasons. Primarily, the kitchen, coolroom, pantry and production areas were absolutely immaculate. Secondly, food prep & storage meticulous.
