I started Dry Ageing my own beef in February with 2 of their Swift whole Sirloins. Great cuts of meat in their own right but first lesson learnt was yield/waste ratio. Next time I asked for a little advice and Darren was excellent. Whole Portoro Scotch was wrapped in cheesecloth soaked with Whisky and aged at 2 degrees C and 80% humidity for 56 Days. Purchased mince from here today. At first glance, it appeared fresh, but when I opened it at home, I found that most of the mince underneath was very dark in colour, old, and had an unpleasant smell. Disappointed and won’t be returning.
