Tried the food truck at Lexington on 10/3/24. Wife and I got the brisket sandwich, pulled pork sandwich, mac and cheese and coleslaw. Everything was perfectly fine. The meat had lots of taste and the side were good. They were very busy and ran out of beans and pulled chicken (obviously not their fault). The sandwiches were pretty skimpy given the $10 to $13 price. If you're REALLY hungry, I couldn't recommend it.
If you haven't had Hinks, then you haven't tried BBQ. This sauce is amazing.
I just recently found Hink's after pulling up Google maps and seeing it listed very close to our house. I bought a couple bottles of the regular and spicy bourbon BBQ sauce and both of them were delicious! We used them on some baby back ribs and well as some chuck roast burnt ends and they turned out fantastic!! Definitely going back for more!
