Chocolate Necessities, on the Guide and in the B'ham Public Market, on Cornwall and York If you are addicted to chocolate and have not been to either locations of chocolate, that's good, it leaves more for me. They make everything from truffles to "bark" (dark or milk chocolate with pistachios or other nuts, goes great with coffee, can make Mondays nearly doable) to gelato (at the Public Market location only). I go to the Guide Meridian location as it's just across the boarder from Langley where I live. If you are looking for a quality chocolate for baking there is a huge selection of many different types. Although I find the choice daunting you will get excellent advice on the various types as well as samples to try. Yummers! One of my favorite chocolates is the Triple Chocolate. Always have a bit of chocolate as "breakfast dessert". I prefer the small bags of varieties, and not truffles or other designer items. I live alone, so it's just for myself and not usually a guest treat. I live in Olympia and use their online ordering service.
I'm always glad to find the shop quiet because sometimes Mr. Buck is willing to talk about his wonderful creations. I've enjoyed his opinions & advice & have tried many fine chocolates on his recommendations--(it helps we like many of the same tastes!) Just to say--I got Fran's (Seattle) chocolates for recent holidays and sorry, Fran's, Chocolate Necessities is IMHO the very best..How did we luck out to have such a fine shop here!!
Not only is the chocolate good, but I was super excited to find Dutch Process cocoa powder here. Checked everywhere in Whatcom County, and this is the place I've found it. Doesn't even matter if was the only place in the county, it's top notch quality.
I discovered this little gem with my brother in 1994. Back then it was just a little shop in an industrial building in Bellingham that we stumbled upon randomly. It has been my all time favorite ever since and I've sampled chocolates from specialty shops all over the world! My no. 1 are the port wine dark. Pure heaven.
